Homemade Vanilla Extract
Making your own vanilla is very simple and also extremely economical. We all know that pure vanilla extract is not so cheap, but the imitation vanilla flavoring just doesn’t compare in taste or quality. By making your own vanilla you can get the high quality and taste you would like for only a fraction of the cost.
Directions:
- 1 vanilla bean
- 1 bottle vodka (375 ml) – the higher the proof the better
Finely chop the vanilla bean, then add it to the bottle of vodka. Allow to sit in a cool dark place for 1-2 weeks before using. The longer it sits the stronger it will become and you will notice the color turning darker. Use this vanilla in the same way that you would use any other vanilla extract. The alcohol will evaporate as it is cooked so there’s no need to worry about getting tipsy from using it. I have read that this type of vanilla extract cannot be used to make homemade ice cream since the alcohol will not freeze; however, I have never tried to do this personally. This vanilla extract can be stored indefinitely in a cool dark place.

hmm! no ice cream? I don't remember if i have ever used the homemade kind in it.
